Apple Tortilla Bake Recipe

Ingredients
  • Base
  • 4 flour tortillas
  • 2 eggs (Large)
  • 1 milk, half & half, or cream (1 cup 8 ounce )
  • 1 sugar (1/3 cup 2 3/8 ounce )
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • 1 teaspoon ground cinnamon
  • FRUIT
  • 1 cup diced apples (1 to 2 apples, 5 1/4 ounce)
  • 1 diced dried apricots or raisins (2 5/8 ounce) (1/2 cup 2 1/4 ounces )
  • 1 sugar (2 tablespoon 7/8 ounce )
  • 1 melted butter (1 tablespoon 1/2 ounce )
  • 1/2 teaspoon cinnamon
Directions
Grease 4 individual baking dishes, about 3/4 cup capacity each. Cut each tortilla into 8 wedges, depending on size, and place them into the cups, layering the wedges around the edges.

Whisk together the eggs, milk or cream, 1/3 cup sugar, vanilla, salt and 1 teaspoon cinnamon. Divide among the 4 baking dishes. Let the mixture rest at room temperature for 30 minutes. Preheat the oven to 350°F.

Mix together the apple, apricots or raisins, 2 Tbsp. sugar, melted butter, and 1/2 tsp. cinnamon. Divide among the baking cups, mounding in the middle. Bake for 25 to 30 minutes, until the custard reaches 160°F and is set in the center. Remove from the oven, and serve warm.

Yield: 4 servings.
