Grease 4 individual baking dishes, about 3/4 cup capacity each. Cut each tortilla into 8 wedges, depending on size, and place them into the cups, layering the wedges around the edges.
Whisk together the eggs, milk or cream, 1/3 cup sugar, vanilla, salt and 1 teaspoon cinnamon. Divide among the 4 baking dishes. Let the mixture rest at room temperature for 30 minutes. Preheat the oven to 350°F.
Mix together the apple, apricots or raisins, 2 Tbsp. sugar, melted butter, and 1/2 tsp. cinnamon. Divide among the baking cups, mounding in the middle. Bake for 25 to 30 minutes, until the custard reaches 160°F and is set in the center. Remove from the oven, and serve warm.
