Lentil Cake Recipe

  • 1/2 cup lentils
  • 2 cups water
  • 1/2 cup honey
  • 1 egg
  • 1/2 cup crushed pineapple - drained
  • 1/4 teaspoon salt
  • 3/4 cup Oil
  • 1 cup grated carrot
  • 1 teaspoon vanilla
  • 1/2 teaspoon soda
  • 1/2 teaspoon cinnamon
Bring to a boil lentils in the two cups of water. Simmer 30 minutes. Puree in blender then combine with remaining ingredients. Mix well and pour into greased and floured 8X8 pan. Bake at 350 degrees for 40 minutes. Frost if you wish
