Ingredients
  • 1/2 cup lentils
  • 2 cups water
  • 1/2 cup honey
  • 1 egg
  • 1/2 cup crushed pineapple - drained
  • 1/4 teaspoon salt
  • 3/4 cup Oil
  • 1 cup grated carrot
  • 1 teaspoon vanilla
  • 1/2 teaspoon soda
  • 1/2 teaspoon cinnamon
Directions
Bring to a boil lentils in the two cups of water. Simmer 30 minutes. Puree in blender then combine with remaining ingredients. Mix well and pour into greased and floured 8X8 pan. Bake at 350 degrees for 40 minutes. Frost if you wish

"I love this cake. I didn't follow the recipe because I think the flour has been missed off. The mixture was much too sloppy, so I used self raising flour and guessed the amount needed. This cake worked well and no one would ever guess it had grated carrot and lentils in it. This will be a cake I will make lots of times and I believe beans could used as well as, or instead of for variations. Because I had to guess the flour, I can't rate it five stars."
