Carrot Pumpkin Bars Recipe

Ingredients
  • 2 cups flour
  • 1 1/4 teaspoons pumpkin pie spice
  • 2 tablespoons baking powder
  • 1 tablespoon baking soda
  • 1/3 cup light butter/margarine, softened
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 2 Eggs
  • 2 egg whites (large)
  • 1 can pumpkin (15 ounce can)
  • 1 cup carrot, finely shredded
  • CREAM CHEESE TOPPING
  • 4 ounces light cream cheese, softened
  • 1/4 cup sugar
  • 1 tablespoon skim milk
Directions
Preheat oven to 350. Grease 15x10 jelly roll pan.

In small bowl, combine flour, pumpkin spice, baking powder and baking soda.

In large bowl, beat butter, sugar and brown sugar until crumbly. Add eggs, egg whites, pumpkin and carrots. Beat until well blended. Add flour mixture and mix until well blended. Spread onto greased pan.

For Cream Cheese Topping, mix together cream cheese, sugar and milk until thoroughly blended. Drop by teaspoons over pumpkin batter and swirl mixture with a butter knife. Bake for 20-25 minutes or until cake tester comes out clean.

Cool in pan completely on wire rack before cutting into squares.

These bars make a large pan but won't take long before their gone. Everyone will be surprised these bars are made with carrots. The pumpkin and carrots make a moist bar and the cream cheese swirled throughout is absolutely delicious.
