Vanilla Roasted Peaches Recipe

When peaches are in season, here's a recipe that is sure to impress. With easy preparation and only a few ingredients, the sweet sauce is delicious served warm beside vanilla ice cream.

  • 2 butter, melted
  • 2 fresh lemon juice
  • 2 sugar
  • 1 vanilla extract
  • 4 peaches, halved, pitted
  • 1 vanilla ice cream
  • 1 raspberries (optional)
Preheat oven to 400 degrees.

In a large shallow baking dish combine butter, lemon, sugar and vanilla. Add peaches, turning to coat with butter mixture. Arrange peaches in a single layer cut side down.

Roast until peaches are tender and liquid is syrupy, 15-20 minutes, brushing with cooking liquid half way through.

Serve peaches warm or at room temperature with ice cream and raspberries, if desired.
