You can enjoy this moist cake any time of year, not just St. Patrick's day. The pudding and soda make this cake light and moist. And the frosting is light and fluffy.

Ingredients
  • 1 box white cake mix
  • 1 box instant Pistachio pudding (3 ounce box)
  • 3 eggs
  • 1 cup oil
  • 1 can 7-up or lemon lime soda
  • FROSTING:
  • 1 box instant Pistachio pudding (3 ounce box)
  • 1 1/2 cups milk
  • 8 ounces whipped topping, thawed
  • 1/4 cup Pistachios, chopped

Place all cake ingredients in a bowl and mix on medium high until mixture is smooth and fluffy, approximately 2-3 minutes. Pour into 2 greased and floured 8-inch round cake pans. Follow cake baking instructions; cool;

For frosting, beat pudding and milk on medium high until smooth, approximately 2-3 minutes. Fold in whipped topping until evenly blended.

After cake is cooled, spread frosting evenly and sprinkle with chopped pistachios for garnish.

NOTE: If you want the frosting more green, add food coloring to desired color.
