Ingredients
4 cups cooked mashed pumpkin
2 Eggs
1 cup flour
Pinch of salt
1 tablespoon baking powder
2 tablespoons sugar (heaping)
Cinnamon Sugar
1 ounce ground cinnamon
6 ounces sugar
Carmel Sauce
1 cup Sugar
6 tablespoons butter
1/2 cup heavy whipping cream
Directions
Combine all ingredients, making a soft batter and fry spoonfulls in a shallow oil till both sides are lightly browned. Drain on paper and serve warm with cinnamon sugar or carmel sauce. Cinnamon Sugar: Combine cinnamon and sugar. Sprinkle over fritters as much as desired and keep rest in a bottle for later use. Carmel Sauce: Heat sugar over high heat in a heavy bottomed pan. As sugar begins to melt, make sure you stir it with a whisk. As soon as the sugar crystals have melted, add the butter, stirring constantly. Once the butter has melted, count to 3 then add the cream. Continue to whisk until the carmel sauce is smooth. Cool, and store in mason jars. Or, for the carmel sauce, you can use Smucker's Ice Cream topping!
