2 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons cinnamon
2 cups sugar
4 eggs
2 cups pumpkin
1 cup oil
1 teaspoon vanilla

Combine all of the ingredients and mix well.
Spread the batter in a 10- x 15-inch pan and bake at 350ºF for 25 minutes.
Allow to cool; then frost with a cream cheese icing if desired.
Cream Cheese Icing:
Combine 8 oz. cream cheese, 1/2 cup of softened butter, 2 tablespoons milk, 2 teaspoons vanilla, and 3 1/2 cups powdered sugar. Mix until smooth and creamy.
