Rhubarb Bundt Cake with Buttermilk Recipe

  • 1/2 cup oleo
  • 1 teaspoon Salt
  • 1/2 cup brown sugar
  • 1 cup white sugar
  • 1 teaspoon soda
  • 1/4 teaspoon allspice
  • 1/2 teaspoon butter flavoring
  • 1/4 teaspoon cloves
  • 1 egg
  • 1 1/2 cups rhubarb
  • 1 cup buttermilk
  • 1/2 cup nuts
  • 2 1/2 cups Flour
  • 1 teaspoon vanilla
Cream together oleo, sugars and flavorings.

Add egg and beat well.

Sift dry ingredients and add alternately with buttermilk.

Fold in rhubarb and nuts.

Spoon into well greased bundt pan. Bake at 350° for 40-45 minutes.

Cool 10 minutes.

Turn out to finish cooling.

OPTIONAL: Topping may be made by 1/3 cup sugar and 3/4 Tablespoon cinnamon sprinkled on top of batter. Try this with apples as well as rhubarb.
