Divinity Recipe

  • 2 2/3 cups sugar
  • 2/3 cup light corn syrup
  • 1/2 cup water
  • 2 egg whites
  • 1 teaspoon vanilla
  • 1 cup nuts-optional
Tut sugar, corn syrup, and water in large saucepan. Cook over medium heat, stir until sugar is dissolved. bring to boil until mixture reaches 120 degrees C. (260 F.) on candy thermometer. This is the hard ball stage.

In a large mixer bowl, beat egg whites until stiff peaks form. Continue to beat while pouring hot syrup into egg whites.

Add vanilla, continue beating until mixture forms stiff peaks and loses its gloss. Drop with teaspoons on wax paper.
