Peanut Brittle 17 Recipe

Ingredients
  • 2 cups sugar
  • 1 cup white corn syrup
  • 1/2 cup water
  • 1/4 cup margarine
  • 2 cups raw peanuts
  • 1 teaspoon vanilla
  • 1 1/2 teaspoons soda
Directions
Combine sugar, syrup, and water. Bring to a boil. Boil until it threads. Stir in margarine until it dissolves. Add peanuts. Cook until peanuts pop open and mixture turns golden brown. Add vanilla. Beat fast. Add soda (it will foam). Beat, spread mixture on heavily buttered piece of foil. Spread as thin as possible. Let cool. Lift by edges and pull to very thin (butter hands first).
