Ingredients
  • 1 pound cassava
  • 1 pinch salt
  • 1 tablespoon oil, or as needed
  • 1 can coconut milk

  • Peel cassava and grate onto a piece of cheesecloth or other lightweight fabric. Twist fabric around grated cassava to wring out as much moisture as possible.
  • Add a pinch of salt, mix in and divide the cassava into 4 portions. Shape each into a thick pancake about 4" across.
  • Heat oil over medium heat in a skillet or griddle. Fry bammies 8 to 10 minutes each side.
  • Put coconut milk in a wide shallow bowl and soak fried bammies 5 to 10 minutes. Return to skillet or griddle and fry until golden brown. Serve hot.
The hardest part of making this traditional Jamaican flat bread might be finding the cassava. Look in specialty or ethnic groceries.

"This was a well-enjoyed side dish to go with Kallaloo. I would suggest frying the bammy cakes in a good/deep amount of oil first and then draining most of that oil before putting the coconut-milk covered cakes back into the pan."
