Ingredients
  • 1/4 cup unsalted butter
  • 1/2 cup sugar
  • 1/4 cup maple syrup - any variety
  • 2 eggs
  • 1/4 teaspoon salt
  • 1 1/2 cups half-n-half
  • 2 1/2 cups sweet potatoes - raw, peeled and grated
Container: shallow baking dish, mixer

  • Grease baking dish.
  • Preheat oven to 400°F.
  • Cream butter, sugar and maple syrup.
  • Beat in eggs, salt and half and half.
  • Fold in grated sweet potatoes.
  • Pour into greased baking dish.
  • Bake for one hour.
  • Serve immediately.
