Seafood Cornbread Muffins Recipe

Ingredients
  • 1 cup yellow cornmeal
  • 1/2 cup flour
  • 1/2 tablespoon baking soda
  • 2 tablespoons sugar
  • 1 cup milk (I use skim milk)
  • 1 egg
  • 1/4 cup canola oil
  • 1 tablespoon salt
  • 1 green bell pepper, chopped
  • 1 onion, chopped
  • 1 can cream style corn (15 ounce can)
  • 1 cup shredded cheddar cheese (or your choice will do)
  • 1/3 cup green onions
  • 2 tablespoons chopped jalapeno pepper slices from a jar or can
  • 2 cups seafood (can be combination of cooked diced shrimp, crawfish tails, crabmeat)
Directions
Preheat oven to 350 degrees. In large bowl, mix together cornmeal, flour, baking soda, and sugar. In another bowl, mix together milk, egg, and oil.

Add onion, salt, green pepper, corn, cheese, green onion, and jalapeno to milk mixture, combining well. Stir into flour mixture. Gently stir in seafood.

Transfer mixture to 2 large muffin pans coated with PAM. Bake 20 minutes.
