Ingredients
  • BARS:
  • 3/4 cup butter or margarine - softened
  • 3/4 cup peanut butter - creamy
  • 3/4 cup sugar
  • 3/4 cup brown sugar - packed
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 1 1/2 cups flour
  • 2 cups oatmeal - quick oats works better than regular oats
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon salt
  • ICING:
  • 1/2 cup peanut butter - creamy
  • 2 cups chocolate chips
  • 1/2 cup butterscotch chips
Container:mixer, saucepan, 15x10 baking pan

  • In a mixer bowl, cream together the butter, peanut butter and sugars until it is nice and creamy.
  • Add eggs one at a time and blend until each is well incorporated.
  • Add the vanilla and mix well.
  • In a medium bowl, combine the four, oatmeal, baking powder and salt.
  • Slowly add these dry ingredients into the batter until well combined.
  • Spray the baking pan with a non stick cooking spray and spread the batter into the pan.
  • Bake at 325° F for 20-25 minutes or just until the bars are slightly browned and a toothpick inserted into the center comes out clean.
  • Allow them to cool while making the icing.
  • In a saucepan, add all of the icing ingredients and melt over a low heat, stirring occasionally.
  • Spread over the bars and allow to cool completely before cutting and serving.

"My mother used to make a cookie like this, known in her circles as "Peanut Butter Crunchies." I had been looking for something like this for a long time, and finally found it. Because I have changed my cooking to try to make everything a bit healthier, I tweaked the recipe as follows: Used organic everything. Changed Oatmeal to 2 1/4 C. Changed Flour to 1 1/4 C. Used less sugar, and used 1/4 C brown sugar and 1 C Coconut Palm sugar. Used 1 extra tsp vanilla. For the frosting, I used a Greek yogurt based frosting of 1 C plain Greek yogurt 2 tsp vanilla, and 3/4 cup powdered sugar then beat that together in the kitchen aid. Chilled it then added 1/2 C cup dark chocolate chips that I melted with 1/4 cup butter and then cooled to room temp. Put it all back in mixer and beat it again. Chilled it (this makes it frosting like instead of glaze like as the yogurt with less sugar has less thickness than butter and sugar.)"
