Lobster Salad Recipe

Ingredients
  • 3 pounds cooked lobster meat - chopped
  • 1/2 cup celery - diced fine
  • 1/2 cup red onion - diced fine
  • 3/4 cup mayo, light or regular - or to taste
  • 1/2 cup fresh lemon zest
  • 1/2 teaspoon Old Bay Seasoning
  • salt and pepper to taste
  • 1 tablespoon capers
  • 4 tablespoons olive oil
  • 1 baguette - sliced into 1/4 inch slices
  • parsley for garnish
Container: Large bowl, baking sheet

  • Mix lobster meat, celery, onion, mayo, zest, seasonings and capers.
  • Chill in refrigerator.
  • Lay baguette slices on a baking sheet and sprinkle with olive oil.
  • Bake at 350° F until lightly toasted, approximately 5 minutes.
  • When cool, spoon generous amount of lobster salad onto each baguette.
  • Garnish with parsley.
