This light salad is great as an appetizer or a light lunch.

Lobster Salad Recipe
  • Mix lobster meat, celery, onion, mayo, zest, seasonings and capers.
  • Chill in refrigerator.
  • Lay baguette slices on a baking sheet and sprinkle with olive oil.
  • Bake at 350° F until lightly toasted, approximately 5 minutes.
  • When cool, spoon generous amount of lobster salad onto each baguette.
  • Garnish with parsley.

Container: Large bowl, baking sheet
-3 pounds cooked lobster meat - chopped
-1/2 cup celery - diced fine
-1/2 cup red onion - diced fine
-3/4 cup mayo, light or regular - or to taste
-1/2 cup fresh lemon zest
-1/2 teaspoon Old Bay Seasoning
- salt and pepper to taste
-1 tablespoon capers
-4 tablespoons olive oil
-1 baguette - sliced into 1/4 inch slices
- parsley for garnish
