Servings: makes approximately 2 cups
Ingredients
  • 3 medium to large tomatoes, cored and cut in 1/2
  • 1 tablespoon jalapeno peppers - finely chopped
  • 1 tablespoon fresh cilantro - chopped
  • 1 tablespoon lime juice
  • 1 teaspoon salt
  • ground pepper to taste

  • Heat oven to 400 degrees F.
  • Cut tomatoes in half.
  • Set them cutside down on a foil-lined baking sheet and cook until skin splits and tomatoes soften, approximately 10 minutes.
  • Cool slightly on sheet; then peel off the skins and discard.
  • Place tomatoes and remaining ingredients in a food processor and process until well blended.
  • Adjust seasoning to taste.
  • Store refrigerated in an air tight container.
