Turn out on floured surface; kneed until smooth and elastic. Place in greased bowl, turning once. Cover; let rise in warm place until double, (covered) about 1 hour. Punch down; divide dough in 3 equal portions (two if making loaves of brad) Cover; let rest 5 minutes. Divide each portion into 8 balls. Turn balls in hands, folding edges under to make even circle. Press flat between hands. Place n greased baking sheets, pressing 3 1/2 inch circles. Cover, let rise until double, about 1/2 hour. Bake at 375 degrees for 10 minutes. Brush with butter. Let cool on baking rack until cold. Store in plastic bags.
