Ingredients
  • Rub
  • 1 teaspoon ground cumin
  • 1 teaspoon kosher salt
  • 1/2 teaspoon ground corriander
  • 1/2 teaspoon sugar
  • 1/4 teaspoon five spice powder
  • 1/4 teaspoon ground cayenne pepper
  • Skewers
  • 1 1/2 pounds boneless pork sirloin cut into 1 inch cubes
  • 1 tablespoon olive oil
  • 4 ripe mangoes, cut into 1 inch chunks
  • 6 green onions, white and light green parts only, cut into 1-2 inch lengths

Rub
  • In a medium bowl, mix the rub ingredients with your fingers. Add the pork and mix well to coat thoroughly.
  • Add the oil to lightly coat. Allow to stand for 10-15 minutes before grilling
  • While meat is marinating, place 4 skewers into water and allow to soak for up to 20 minutes.
Skewers:
  • Thread alternately the pork, mangoes, and green onions onto skewers. Leave a little room between each.
  • Grill over high heat until pork is barely pink, approximately 8-10 minutes, turning once.
  • Place skewers on platter and serve.
