Marinated Shrimp 5 Recipe

Ingredients
  • 1 jar marinated artichoke hearts (6 oz. jar)
  • 3 tablespoons green part of scallion (green onion)
  • 2 tablespoons fresh basil
  • 1 clove garlic
  • 1 tablespoon lemon juice
  • 2 tablespoons olive oil
  • 1 pound cooked shrimp
Directions
Drain artichoke marinade into a bowl.

Finely chop artichoke hearts, green onions, garlic and basil and add to marinade. Add lemon juice, olive oil and shrimp. Mix well.

Marinate at least one hour, but preferably overnight.

Serve over fresh tomato slices, avocado slices or on a bed of lettuce.
