Cold Chili Con Queso Recipe

  • 1 can Rotel Tomatoes and Green Chile
  • 1/2 pound Velveeta
Pour entire can of Rotel into a blender. Cut Velveeta into cubes, and add a little bit at a time to blender until you get a nice dipping consistency. It does not take as much Velveeta as usual queso, so don't add too much to begin with. You can keep this dip in the refrigerator and serve it cold with tortilla chips or fresh vegetables. Simple dip that everyone loves.
