Ingredients
  • 1/2 pound trimmed cabbage, about 3 cups sliced
  • 6 slices bacon
  • 2 tablespoons vinegar
  • 1/3 cup olive or canola oil, or a mix
  • 2 teaspoons prepared mustard
  • salt and pepper to taste

  • Shred cabbage coarsely. Cut bacon slices into narrow strips and cook over medium-low heat until crisp. Drain on a paper towel.
  • Whisk together oil, vinegar, mustard, salt and pepper until thoroughly mixed.
  • Toss cabbage and bacon with dressing and serve.
Crisp and crunchy cabbage tastes great with little nuggets of bacon. This simple, but very flavorful salad, is even easier if you use bottled dressing and pre-cooked bacon.
