Tilapia in Tomato Sauce Recipe

Easy, high protein, microwavable fish entrée, nicely enhanced with seasoned tomato sauce.

  • 2 Tilapia fillets, approximately 4 oz. each
  • 1/3 tomato sauce
  • 3 tomato paste
  • 1 1/2 (to 2 tablespoons) olive oil, as needed
  • 1 cilantro
  • 2 honey
  • 1 garlic, minced
  • salt and pepper to taste
  • 1 hot red pepper flakes (optional)
Container: Microwavable baking dish
  • Combine tomato sauce, tomato paste, olive oil, cilantro, honey, garlic and red pepper flakes.
  • Sprinkle fillets with salt and pepper and place in a microwave safe container. Spoon tomato mixture over each fillet and cover with plastic wrap. Microwave on medium-high temperature for 3 to 4 minutes or until fish is done.
  • Serve immediately.

 Leftover tomato paste and tomato sauce can be frozen in a freezer safe bag and used at a later date.
