Servings: Makes 8-10, 3-inch to 4-inch latkes
Ingredients
  • 10 ounces frozen spinach, thawed
  • 4 potatoes, large
  • 1 onion, medium
  • 3 eggs, slightly beaten
  • 1/3 cup flour
  • 1 1/4 teaspoons salt
  • 1 teaspoon baking powder
  • oil for frying
  • garnish: sour cream, optional

  • Thaw and drain spinach. Remove any excess moisture.
  • Peel and grate potatoes and onions. Remove any excess moisture.
  • Combine all ingredients. In a large, heavy skillet heat a small amount of oil. Form ingredients into small 3-inch to 4-inch cakes. Place cakes into prepared skillet. Brown on both sides.
  • Remove from skillet and place on paper towel to remove excess oil.

             Place in warm oven until time to serve. Garnish with sour cream if desired.

""1 1/4 salt" I thought they meant cups!!! There was no other indication(I'm not a cook which is why I use these sites). The saltiest things I've ever had!!! A big waste of potatoes :-("
