Squash Pecan Casserole Recipe

Ingredients
  • 1 pound yellow squash, sliced, cooked and drained.(recipe calls for 1 lb but I use at least 2 lbs)
  • 1 tablespoon sugar
  • 1 egg
  • 3/4 cup mayonnaise
  • 1/2 cup cheese, grated
  • 1/2 stick butter, softened
  • salt and pepper, to taste
  • Plain bread crumbs
  • 1/2 cup Pecans
Directions
Mix all ingredients, except bread crumbs and pecans. Spray a 9-inch square baking dish or 13x9x2 inch pan with canola or vegetable spray. Place ingredients into pan and top with bread crumbs and pecans. Bake at 400° for 20 minutes.
