Sweet and Sour Red Cabbage and Apples 2 Recipe

Ingredients
2 tablespoons butter or margarine
2 tablespoons olive oil
1 red cabbage, thinly sliced (large)
3 Granny Smith apples, cut into thin wedges
1 cup Sugar
1 cup red wine vinegar
1/4 teaspoon salt
1/4 teaspoon pepper
Directions
Melt butter in large skillet over medium heat. Add oil. Add cabbage and sauté for about 10 minutes. Stir in apples and set aside. Melt sugar in another heavy saucepan over medium heat, stirring constantly. Stir in vinegar with sugar. The mixture will bubble and the sugar will begin to clump. Bring to a boil. Cook, stirring often, until sugar dissolves and mixture is caramel colored. Add cabbage/apple mixture. Cook over medium heat, stirring occasionally for about 20 minutes. Add salt and pepper. Yield: 6 servings.
