Ingredients
2 tablespoons or less) olive oil
1 1/4 pounds Brussels sprouts (thinly sliced)
1/2 cup Chicken Broth
2 tablespoons chopped fresh parsley
2 teaspoons fresh lemon juice
1/2 teaspoon Salt
1/4 teaspoon freshly ground pepper
Directions
Heat oil in a large skillet over medium heat; add Brussels sprouts and broth. Cook, stirring until tender, 10-15 minutes. Add parsley, lemon juice, salt and pepper. Cook, stirring two minutes more. (Can be made ahead.) Reheat in microwave 3-5 minutes, just until heated through. My children eat this and they are not fans of Brussels sprouts. Makes 4 cups. 1/2 C. = 60 calories.
