Roasted Colorful Vegetables Recipe

  • 1 onion, diced
  • 1 package fresh mushrooms, diced
  • Olive oil
  • 16 ounces frozen French-style green beans
  • 1 red pepper, sliced
  • 1 orange pepper, sliced
  • 1 can baby corn, chopped
  • 1 tablespoon onion flakes
  • 1 tablespoon kosher salt
Combine the onion and mushrooms in a greased baking pan and sprinkle with oil. Bake uncovered at 450°F for 25 minutes. Add the remaining vegetables, onion flakes and kosher salt. Mix well. Bake for another 10-15 minutes.
