Quick Peanut Brittle Recipe

Holiday peanut brittle that is crunchy and filled with peanuts. Use 2 buttered pans if you prefer a little thinner brittle.

Ingredients
  • 2 cups sugar
  • 1 cup white corn syrup
  • 1/4 cup hot water
  • 2 1/2 cups peanuts
  • 4 teaspoons vanilla
  • 2 teaspoons baking soda
Directions
Cook sugar, corn syrup and hot water until forms hard ball stage.

Then add peanuts. Cook until amber colored.

Remove from heat and add vanilla and soda. Pour into buttered jelly roll pan.
