Creamy Tzatziki Sauce Recipe

  • 1 cucumber, peeled, finely diced
  • 1/2 teaspoon coarse salt
  • 1 cup plain Greek yogurt
  • 1 clove garlic, crushed
  • 2 teaspoons lemon juice
  • 1 teaspoon fresh mint

  • Peel cucumber; quarter lengthwise and remove seeds. Dice thinly and place in shallow bowl with coarse salt. Weigh down with plate. Refrigerate for an hour or more. Ring out liquid.
  • Mix cucumber and garlic in yogurt. Add lemon juice and mint. Salt to taste. Serve with pita bread.
NOTE: If you can't find Greek yogurt, drain regular plain yogurt through a coffee filter over a bowl overnight.
Creamy sauce with the cool cucumber and fresh mint. Great served as an appetizer with grilled pita bread or as a condiment to grilled meat. You'll never buy it in the store again after tasting this homemade delight.
