SHRIMP GUMBO 3 Recipe

Ingredients
  • 2 cups sliced fresh okra
  • 1/2 cup fat or bacon drippings
  • 2/3 cup chopped green onions
  • 3 cloves garlic, minced
  • 1 1/2 teaspoons salt
  • 2 teaspoons black pepper
  • 2 pounds shrimp, shelled and deveined
  • 2 cups Hot Water
  • 1 cup Stewed Tomatoes
  • 2 whole bay leaves
  • 6 drops hot pepper sauce
Directions
Sauté okra in fat, stirring constantly, about 10 minutes or until okra appears dry. Add onions, garlic, salt, pepper and shrimp. Cook about 5 minutes. Add water, tomatoes and bay leaves. Cover and simmer 20 minutes. Remove bat leaves. Add pepper sauce. Makes five or six servings The gumbo may be spooned over rice or serving may be topped with a scoop of rice.
