Cheesy Cauliflower Soup Recipe

Ingredients
  • 1 head cauliflower
  • 2 cans chicken broth (14.5 ounce cans)
  • 2 tablespoons butter
  • 1 onion (small)
  • 1 cup celery
  • 1 1/2 cups milk
  • 1 cup Velveeta cheese, cubed
  • salt and pepper, to taste

Cook cauliflower in chicken broth until tender; mash until desired consistency.

Meanwhile, in a skillet, cook butter, onion and celery until tender and translucent.

To the mashed cauliflower, add sauteed vegetables, milk and cheese. Salt and pepper to taste. Cook over low heat until warmed through, approximately 10 minutes.

Creamy and full of flavor, this soup is sure to please. It has all the great taste of cheesy cauliflower with the added bonus of celery and onions. Garnish with crispy bacon bits for a bit of texture.
