Shrimp Scampi 39 Recipe

  • 2 pounds large shrimp (peeled and deveined)
  • 1 tablespoon Extra virgin olive oil
  • 1 tablespoon fresh garlic (minced)
  • 1/4 cup green onions (chopped)
  • 2 tablespoons Lemon Juice
  • 2 tablespoons dry white wine
  • 1/4 cup fresh parsley (chopped)
  • 1/4 teaspoon sea salt
  • fresh ground pepper to taste
  • 4 tablespoons butter
Heat olive oil over medium heat in a large saucepan. Add shrimp and cook for about 3 minutes. Turn the shrimp over once and cook about 2 minutes longer. Transfer to a bowl and keep warm. Add the garlic and onions to the saucepan and cook about 15 seconds. Add lemon juice, wine, parsley, salt and pepper. Remove from the heat and add the butter. Stir until blended and add cooked shrimp. Toss to coat with the sauce. If desired, top each serving with shrimp sauce and serve immediately with pasta or rice.
