Spanish Rice with Tomatoes Recipe

Ingredients
  • 1 tablespoon oil
  • 1/2 cup onion, chopped
  • 1/3 cup bell pepper, chopped
  • 2 cups minute rice
  • 1 can tomato sauce (8 ounce can)
  • 1 can diced tomatoes (14.5 ounce can)
  • 1 can water (8 ounce cans)
  • salt & pepper, to taste

Saute onion and bell pepper in oil over medium heat until onions are clear.

Add rice, stirring continually until rice browns.

Add tomato sauce, tomatoes and water, stirring to combine. Season with salt and pepper. When it starts boiling remove from heat cover and let stand until rice is tender, approximately 10 minutes.

NOTE: For spicy spanish rice substitute diced tomatoes for Mexican stewed tomatoes.

Throw a Mexican fiesta right in your own home. This rice tastes as good as it looks. It's the perfect side dish for your fajitas or tacos.
