Ham and Egg Mini Wafflewiches Recipe

  • 1 egg, lightly beaten
  • 8 frozen mini waffles
  • 2 teaspoons butter
  • 2 thin slices deli ham, cut inch half
  • 4 teaspoons shredded cheddar cheese
Spray small skillet with cooking spray, heat over medium heat. Add egg; cook and stir until set.

Spread one side of each waffle with butter. Place ham slice on unbuttered side of 4 waffles. Top each with one fourth of cooked egg and 1 tsp cheese. Top with remaining 4 waffles, buttered side up.

Heat medium skillet over medium heat. Pressing with back of spatula, cook sandwiches 3 to 4 minutes per side or until cheese melts and waffles are golden brown.
