Pumpkin Beef Hot Dish Recipe

Ingredients
1 soccer size pumpkin
1 onion
2 tablespoons vegetable oil
2 pounds ground beef
2 tablespoons soy sauce
2 tablespoons brown sugar
1 can sliced mushrooms (4 oz. can)
1 can Cream Mushroom soup
1 1/2 cups cooked rice
Directions
Clean out the center of the pumpkin. If you desire you can paint a face on the outside. Sauté onion in oil. Add meat, brown and drain. Add soy sauce, brown sugar, mushrooms and soup. Simmer 10 minutes, add rice. Fill pumpkin shell, replace top of pumpkin and place pumpkin in a baking dish or on a cookie sheet. Bake at 350° for 1 to 1-1/2 hours (until pumpkin meat is completely cooked) serve out of pumpkin shell.
