Fruit Kabobs with Tropical Fruit Coulis Recipe

  • 6 cups bite size pieces of fruits (pineapple, watermelon, cantaloupes)
  • 1 cup green grapes
  • 1 cup Blueberries
  • 3 star fruit, cut into 24 slices (small)
  • 2 mangos, peeled, seeds removed and cut into pieces (large)
  • 1/4 cup pineapple preserves
  • 24 skewers
Thread 4-6 pieces of fruit (except mangos) on each of the 24 skewers. Place skewers on large serving platter and set aside.

Place mango pieces and pineapple preserves in a food processor. Cover and process until smooth. Pour into small serving bowl.

Serve kabobs with mango coulis.

Makes 24 appetizers
