Don't Discard Citrus Zest - Freeze It!

Citrus zest can be frozen and used later, so if you are just juicing or using the flesh of a lemon, orange, or lime, you can remove the zest before cutting up the fruit. It is easier to remove the zest from a whole lemon, orange, or lime rather than juicing it first or removing the rind. Place the zest into an air-tight freezer bag or container and freeze for up to 6 months. Also, the rind can be cut off the citrus fruit and stored in the freezer, and then the zest removed when you are ready to use it. But as mentioned above, it is easier to handle the whole fruit when zesting than a piece of rind.
