Tennessee Sweet Potato Squash |

A type of vegetable considered to be a pumpkin and squash heirloom variety that is often used as a decorative squash rather than an eating squash. The outer skin of this squash can be light green to tannish white in color and may have green broken streaks running lengthwise from top to bottom of the squash. Oblong and bell-like or teardrop in shape, the Tennessee Sweet Potato Squash contains a fine, dense and dry-textured flesh, pale golden yellow that is not highly prized for eating, but is commonly consumed by many. Although this squash does not contain an abundance of flesh, when cut and removed it can be used for making pies or served as a side dish made in a manner similar to baked yams. As it matures, the weight of the squash can average from 10 to 12 pounds. The Tennessee Sweet Potato Squash may also be referred to as a Green Striped Bell squash or simply a Tennessee Bell squash.
