Strozzacavalli Pasta

A ribbon pasta that is typically hand twisted so that it is formed into a round, thick strand of pasta. Approximately 8 inches in length, this tightly wrapped pasta loosens slightly as it cooks, opening areas for hearty sauces to lay in the open curves of the twists. Unlike the medium sized rods of pasta that are thinner and more flexible, strozzacavalli is a heavier variety providing a hearty flavored pasta served as a main dish.
