Grown primarily in northern India, this pepper is considered to be the hottest and provide the most intense heat of all chile peppers. When rated on the Scoville Heat Index, which measures the heat from zero (0) SHU to over millions of SHU, such as 4 million SHU. The Bhut Jolokia Chile rates 1,041,427 SHU. In comparison, the mild Bell Pepper rates 0 SHU while a Jalapeno Pepper will rate between a range of 4,000 to 6,000 SHU.

The Bhut Jolokia are used as an ingredient in curry dishes with pork or other meats. It provides a sweet and spicy flavor to the meat, rice and other ingredients. Oval in shape and similar in appearance to a jalapeno pepper, the Bhut Jolokia grows to the size of 2 or 3 inches in length and 1 inch or a little larger in width. When harvested, this pepper is typically picked when red in color but may also be picked when pale orange or yellow in color.
