Hey, everyone! This is Laurie from RecipeTips.com. Fall is in the air and the acorn squash are ripe, so I am going to show you a quick way to make them so they are ready for your dinner table. I have one acorn squash here that I just sliced in half, and I removed the seeds. The next thing you want to do is turn it over and you are going to poke holes in the skin of the acorn squash just so that when you put this in the microwave, the squash is going to explode on you. Do that to both sides. Place the squash in a microwavable-safe bowl, cut side down, and you are just going to cover it up with some plastic wrap. Be sure to leave a little corner of this open so that the steam can vent through. You are going to want to pop this in the microwave for about ten to twenty minutes on high. After twenty minutes, if the squash does not feel tender to the touch of a fork, go ahead and throw it back in the microwave for about five minutes until it comes out nice. These squash are ready to go ahead and eat just like it is. You can scoop out the flesh, mix in a little butter, and serve it; or you can just serve it on a plate like this, spread a little butter on it, salt and pepper, and it is ready to go. But, I am going to show you a really great way to add a lot of flavor. Place your acorn squash face up on a cookie sheet. Go ahead and mix together some brown sugar and butter. This is equal parts brown sugar and butter. Melt it together, and then you are just going to baste it onto the flesh of the acorn squash. Pop this under the broiler for five to seven minutes, and this sugar on top of here is going to get nice and caramelized and really sweeten up that acorn squash.
