Mexican Dump Recipe

Quick and easy Mexican dish. I came up with this recipe because I was tired of the same old dishes my family likes. This was a big hit with everyone that has tried it. I just found some ingredients in my pantry, threw them in a pan, and put it in the oven. It is fast and easy for nights that you do not have much time. We normally eat this on soccer night after practice when we do not have much time before the kids go to bed.

  • 1 pound ground beef
  • 1 can corn
  • taco seasoning
  • 1 box corn bread mix
  • 1 package shredded cheddar cheese
  • bell pepper, chopped (optional)
  • onion, chopped (optional)
  • Kidney beans (optional)
  • Brown the ground beef and drain.
  • Add taco seasoning according to package.
  • Stir in corn.
  • Stir in cheese (amount desired).
  • Spread into an 8x8 pan.
  • Mix cornbread according to package.
  • Spread on top of meat mixture.
  • Bake according to cornbread package.
  • If you like other items such as peppers, onion, and beans, mix them into the meat mixture before spreading into pan.
