Salmon Loaf with Lemon Sauce Recipe

Ingredients
SALMON LOAF
1 can salmon, cleaned
2 Eggs, beaten
1 cup dry bread crumbs, or crackers
1/2 teaspoon Salt
1/2 teaspoon pepper
1/2 cup Milk
1 tablespoon lemon juice
1/2 onion, chopped (small)
Lemon Sauce
1/4 cup sugar
1 tablespoon corn starch
pinch of salt
nutmeg
1 cup boiling water
2 tablespoons butter
2 tablespoons Lemon Juice
Directions
SALMON LOAF: Mix all ingredients together; put in greased loaf pan. Bake at 350 for 45 minutes, or until browned on top. LEMON SAUCE: Mix sugar, salt, and cornstarch together, and add gradually to boiling water. Boil for five minutes, stirring constantly. Remove from heat, and add butter, lemon juice and sprinkle (to taste) with nutmeg. Serve hot over salmon loaf.
