Fruit Pizza with Glaze Topping Recipe

A perfect summer treat. This fruit pizza can be enjoyed anytime of the year but is best when the fruit is at it's peak. It will be a favorite of both young and old.

  • 1 cup powdered sugar
  • 1 1/2 cups margarine, melted
  • 3 cups flour
  • 16 ounces cream cheese, softened
  • 1 cup sugar
  • 2 teaspoons vanilla
  • 4 cups assorted fruit, cut up
  • 3 tablespoons cornstarch
  • 1 1/2 cups fruit juice (apple, orange, or pineapple work well)
  • 1 cup sugar
  • 2 teaspoons lemon juice
  • Mix together powdered sugar, melted margarine and flour; press in large cookie sheet. Bake for 20 minutes at 325 degrees F.; cool.
  • Mix together cream cheese, sugar and vanilla. Spread over cooled crust.
  • Top with fruit.
  • Boil together cornstarch, fruit juice, sugar and lemon juice. Let the glaze cool and pour over fruit.

"I made this fruit pizza along with the vegetable pizza for my sister's shower. This was also a big hit, especially with the kids that were there. I had a little more of this leftover but I was glad because I thought it was delicious. I got to enjoy it that night and had a couple of pieces for the next day!"
