$20 Pineapple Carrot Cake Recipe

Ingredients
  • Cake
  • 3 cups sifted all purpose flour
  • 2 cups sugar
  • 2 teaspoons Baking Soda
  • 2 teaspoons cinnamon
  • 1 teaspoon Salt
  • 4 eggs
  • 1 1/2 cups cooking oil
  • 1 cup crushed pineapple (include little of the juice)
  • 2 cups grated carrots
  • 2 teaspoons vanilla extract
  • 1 cup chopped nuts
  • Frosting
  • 1 package cream cheese (8 oz pkg)
  • 1 stick margarine
  • 1 box confectioners sugar
  • 2 teaspoons vanilla extract
  • 1 cup chopped nuts
Directions
Combine sugar and oil; add vanilla; add eggs one at a time beating after each addition. Add dry ingredients alternately with pineapple and nuts. Lastly add grated carrots. Don't over beat. Pour into three 9 inch greased pans and bake at 350° for 25-30 minutes. Cool slightly and frost with your favorite icing.
