Raves Review Coconut Cake Recipe

Ingredients
  • 1 box yellow cake mix
  • 1 box instant vanilla pudding mix (4 serving)
  • 1 1/3 cups water
  • 4 eggs
  • 1 cup nuts
  • 1/4 cup Oil
  • 1 1/3 cups coconut
  • Cream cheese frosting
  • 1/3 cup butter or margarine
  • 6 ounces cream cheese
  • 1 box confectioners sugar
  • 4 teaspoons milk
  • 1/2 teaspoon Vanilla Extract
Directions
Combine dry cake mix, water, eggs, and oil in a mixing bowl. Beat on medium speed for 4 minutes. Stir in coconut and nuts. Pour into greased and floured pan. Bake 60 minutes at 325°. Cool completely. Frosting: In a mixing bowl, cream butter. Add cream cheese, sugar, milk, and vanilla. Blend well. Spread on cooled cake.
