This is a recipe that I've used several times and modified to be lower in sugar and fat and higher in fiber.

Ingredients
2 cups wheat flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 cup sugar
2 teaspoons cinnamon
1/2 cup milk (can use soy milk or low fat milk)
2 eggs (or egg substitute)
1/2 cup vegetable oil (or substitute some of this with apple sauce)
3 ripe bananas
1 teaspoon vanilla extract
1 cup chopped walnuts (optional)
2 tablespoons ground flaxseed (optional)

Preheat oven to 350 degrees.
Combine flour, baking powder, baking soda, cinnamon, and flaxseed.
Combine milk, eggs, veg. oil, bananas, sugar, vanilla extract, applesauce until smooth.
Mix both together and place in a greased 9 x 5 bread pan, add walnuts, and bake for 45-50 min or until fork comes out clean.
