Kathy's Kicked-Up Sausage, Peppers, and Onions Recipe

  • 1 package Premio Sweet Italian Sausage (or any favorite Premio sausage flavor) cut into 1-inch pieces
  • 2 large onions cut into 1/2-inch wedges
  • 2 large peppers cut into 1/2-inch strips
  • 1 1/2 jars (16 oz.) Chi-Chi's Mild Salsa
  • 1 package Light and Fluffy Medium Egg Noodles
  • grated Parmesan cheese
  • olive oil or cooking spray
  • Fill large pot with water and heat on medium (for cooking noodles).
  • Add olive oil to a large skillet or spray the skillet generously with cooking spray.
  • Add sausage, peppers, and onions.
  • Cover and cook over medium heat, stirring occasionally until sausage is just about done, about 15 minutes.
  • Cook another 5 minutes uncovered.
  • Reduce the heat under the skillet to low and add the salsa. Stir well to combine the sausage, peppers, onions, and salsa.
  • While the sausage and vegetable mixture is simmering, add the noodles to the pot of boiling water. Cook until tender.
  • Serve the sausage, peppers, and onions over a small bed of noodles and top with some grated Parmesan cheese.
