Taiwan Mushi Recipe

  • 1 container tofu (drained well, overnight better) (20 ounce container)
  • 1 tablespoon oil
  • 1 pound ground pork or chicken
  • 1 onion, sliced (small)
  • 1 can shoestring bamboo shoots, rinsed and drained (small can)
  • 4 dried shiitake mushrooms, soaked, rinsed and sliced thin (medium)
  • 1/3 cup chicken broth
  • 2 teaspoons sesame seed oil
  • 1/4 cup sugar
  • 1/2 cup soy sauce
  • 1 tablespoon sake
  • 3 eggs, beaten
Cut tofu into 8 slices and layer on the bottom of an oven-proof casserole dish. Heat oil in pan and sauté meat; drain fat. Add onion, bamboo shoots, and mushrooms. Add remaining ingredients. Heat through and pour over tofu. Pour beaten eggs over mixture. Bake at 350 degrees for 30-35 minutes. Garnish with chopped green onions.
